Ingredients

  • 1 cup Fresh strawberries
  • 8 oz Cream cheese, softened
  • 1 cup Unsalted butter, softened
  • 4 cups Powdered sugar
  • 1 tsp Vanilla extract
  • 1 pinch Salt

Directions

Step 1

Wash the fresh strawberries thoroughly and pat them dry. Remove the stems and use a blender or food processor to puree the strawberries until smooth.

Step 2

Pour the strawberry puree into a saucepan over medium heat. Cook while stirring occasionally to allow the puree to reduce to about 1/4 cup, which intensifies the flavor. This should take about 8–10 minutes. Remove from heat and let the puree cool completely.

Step 3

In a large mixing bowl, beat the softened cream cheese and unsalted butter together using an electric mixer on medium speed until the mixture is smooth and creamy, about 2–3 minutes.

Step 4

Add the cooled strawberry puree and vanilla extract to the cream cheese mixture. Beat until fully incorporated and the mixture turns a light pink color.

Step 5

Gradually add the powdered sugar, one cup at a time, beating on low speed to prevent a sugar cloud. Once all the powdered sugar is added, increase the mixer speed to medium and beat until the frosting is fluffy and smooth, about 2–3 minutes.

Step 6

Add a pinch of salt and give the frosting a final mix to enhance the flavors.

Step 7

Use the frosting immediately on your favorite cake, cupcakes, or cookies, or store it in the refrigerator in an airtight container for up to 3 days.
