Step 1

Start by thoroughly washing the strawberries under cold running water. Hull the strawberries and cut them into halves or quarters if they are large.

In a large, heavy-bottomed saucepan, combine the strawberries, granulated sugar, lemon juice, and lemon zest.

Place the saucepan over medium heat and stir until the sugar is completely dissolved, taking care not to let the mixture boil too early.
