Preheat your oven to 275°F (135°C) and line a 9-inch pie pan with parchment paper or lightly grease it.
In a clean mixing bowl, combine the egg whites and cream of tartar. Using an electric mixer, beat the egg whites on medium speed until soft peaks form.
Gradually add the granulated sugar, a tablespoon at a time, while continuing to beat the egg whites on high speed. Beat until stiff, glossy peaks form.
