Ingredients

  • 450 grams Fresh asparagus
  • 250 grams Fresh strawberries
  • 100 grams Baby spinach
  • 60 grams Goat cheese
  • 50 grams Pecans
  • 3 tablespoons Olive oil
  • 2 tablespoons Fresh lemon juice
  • 1 teaspoon Honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper

Directions

Step 1

Wash and trim the woody ends off the asparagus. Slice the asparagus into bite-sized pieces and set aside.

Step 2

Bring a pot of water to a boil. Blanch the asparagus for 2–3 minutes until bright green and tender-crisp. Drain and transfer immediately to an ice bath to stop the cooking process. Drain again and set aside.
