Ingredients

  • 250 grams Fresh strawberries
  • 150 grams Fresh or frozen cranberries
  • 100 grams Granulated sugar
  • 60 ml Water
  • 1 tablespoon Fresh lemon juice
  • 0.5 teaspoon Vanilla extract (optional)

Directions

Step 1

Hull and quarter the strawberries, and rinse the cranberries under cold water.

Step 2

In a medium saucepan, combine the strawberries, cranberries, granulated sugar, and water.

Step 3

Cook over medium heat, stirring occasionally, for about 10-12 minutes, or until the cranberries burst and the strawberries soften.

Step 4

Remove the saucepan from the heat and stir in the fresh lemon juice and vanilla extract, if using.

Step 5

Allow the mixture to cool for 5 minutes, then transfer to a blender or use an immersion blender to puree until smooth.

Step 6

For a silky coulis, pass the mixture through a fine-mesh sieve into a clean bowl, using the back of a spoon to press the puree through and discard any solids.

Step 7

Let the coulis cool completely. Serve immediately or refrigerate in an airtight container for up to one week.
