Ingredients

  • 2 sheets puff pastry sheets (thawed)
  • 250 grams strawberries (hulled and sliced)
  • 50 grams granulated sugar
  • 1 tablespoon cornstarch
  • 150 ml heavy cream
  • 100 ml milk
  • 2 large egg yolks
  • 2 tablespoons Amaretto liqueur
  • 0.5 teaspoon almond extract
  • 2 tablespoons powdered sugar (for dusting)
  • 1 large egg (for egg wash)
  • 1 tablespoon water (for egg wash)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a small saucepan, combine the sliced strawberries, granulated sugar, and cornstarch over medium heat. Cook while stirring until the strawberries soften and the mixture thickens slightly, about 5-7 minutes. Remove from heat and let it cool completely.

Step 3

In a separate saucepan, whisk together the heavy cream, milk, and egg yolks. Place over medium heat, stirring constantly, until the mixture starts to thicken, about 5 minutes.

Step 4

Remove from heat and stir in the Amaretto liqueur and almond extract. Allow this custard to cool completely.

Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into 4 equal squares (making 8 squares total).

Place the pastry squares on the prepared baking sheet and lightly score a border about 1/2 inch from the edges of each square. Be careful not to cut through completely.

In a small bowl, whisk together the egg and water to make an egg wash. Brush the edges of the pastry squares with the egg wash.
