Ingredients

  • 2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 1 teaspoon Ground cinnamon
  • 2 large Eggs
  • 0.5 cups Whole milk
  • 0.5 cups Unsalted butter, melted and cooled
  • 1 teaspoon Vanilla extract
  • 1.5 cups Fresh strawberries, chopped
  • 0.5 cups Slivered almonds
  • 1 tablespoon All-purpose flour (for tossing strawberries)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan or line it with parchment paper.

Step 2

In a large mixing bowl, whisk together the 2 cups of all-purpose flour, sugar, baking powder, salt, and ground cinnamon until well combined.

Step 3

In a medium mixing bowl, beat the eggs. Then whisk in the milk, melted butter, and vanilla extract until smooth.

Step 4

Add the wet ingredients to the dry ingredients and gently mix until combined. Be careful not to overmix, as this can make the bread dense.

Step 5

In a small bowl, toss the chopped strawberries with 1 tablespoon of flour (this helps prevent them from sinking in the batter).

Step 6

Gently fold the strawberries and slivered almonds into the batter using a spatula.

Step 7

Pour the batter evenly into the prepared loaf pan and smooth the top with a spatula.

Step 8

Bake in the preheated oven for 50–55 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

Step 9

Allow the bread to cool in the pan for 10 minutes, then carefully transfer it to a wire rack to cool completely before slicing.

Step 10

Serve the bread plain, or with a smear of butter or cream cheese, and enjoy!
