Ingredients

  • 4 large Egg whites
  • 1 cup Granulated sugar
  • 0.5 teaspoon Cream of tartar
  • 1 teaspoon Vanilla extract
  • 1 cup Heavy whipping cream
  • 2 tablespoons Powdered sugar
  • 2 cups Fresh strawberries
  • 1 teaspoon Lemon juice

Directions

Step 1

Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper.

Step 2

In a clean, dry mixing bowl, beat the egg whites with an electric mixer on medium speed until frothy.

Step 3

Add the cream of tartar to the egg whites and continue to whisk on medium-high speed until soft peaks form.

Step 4

Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat the mixture. Beat until stiff, glossy peaks form and the sugar has completely dissolved.

Step 5

Fold in the vanilla extract gently using a spatula.

Step 6

Spoon or pipe the meringue onto the prepared baking sheet in 6 even portions, creating a slight well in the center of each to hold the toppings later.

Step 7

Bake the meringue in the preheated oven for 1 hour and 30 minutes, or until crisp and dry to the touch. Turn off the oven, crack the door slightly, and let the meringues cool completely inside the oven.

Step 8

While the meringues cool, wash and hull the fresh strawberries, then slice them. Toss them with lemon juice and set aside.

Step 9

In a chilled mixing bowl, whip the heavy cream with an electric mixer on medium speed until it begins to thicken.

Step 10

Add the powdered sugar to the cream and continue whipping until soft peaks form.

Step 11

To assemble, place each meringue on a serving plate. Top with a dollop of whipped cream and a generous portion of the prepared strawberries.

Step 12

Serve immediately and enjoy the light, airy dessert!
