Ingredients

  • 2 cups All-purpose flour
  • 1/3 cup Granulated sugar
  • 2 teaspoons Baking powder
  • 1/4 teaspoon Salt
  • 1/2 cup Cold unsalted butter, cubed
  • 3/4 cup Fresh strawberries, diced
  • 1/2 cup Heavy cream
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 1/2 cup Powdered sugar (optional, for glaze)
  • 1 tablespoon Heavy cream (optional, for glaze)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

Step 3

Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingertips, work the butter into the flour mixture until it resembles coarse crumbs.

Step 4

Gently fold in the diced strawberries, ensuring they are evenly distributed.

Step 5

In a separate bowl, whisk together the heavy cream, egg, and vanilla extract until well combined.

Step 6

Pour the wet ingredients into the dry ingredients. Using a spatula, gently mix until the dough just comes together. Be careful not to overmix.

Step 7

Turn the dough out onto a lightly floured surface and gently pat it into a circle about 1 inch thick.

Step 8

Using a sharp knife or bench scraper, cut the dough into 8 wedges (like a pie) and transfer them to the prepared baking sheet, spacing them slightly apart.

Step 9

Bake for 16-18 minutes, or until the scones are golden brown on the edges.

Step 10

Remove the scones from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Step 11

If desired, make the glaze: In a small bowl, whisk together the powdered sugar and heavy cream until smooth. Drizzle the glaze over the cooled scones before serving.
