Ingredients

  • 800 grams Potatoes
  • 50 grams Unsalted butter
  • 1 large Onion
  • 250 milliliters Chicken or vegetable stock
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Fresh parsley (optional, for garnish)

Directions

Step 1

Peel and slice the potatoes into thin rounds, about 5mm thick. Rinse under cold water to remove excess starch and pat dry with a clean kitchen towel.

Step 2

Peel and finely slice the onion into thin rings.

Step 3

In a large, heavy-bottomed frying pan or skillet with a lid, melt the butter over medium heat.

Step 4

Add the onion slices to the pan and cook gently for 5 minutes, stirring occasionally, until softened but not browned.

Step 5

Layer the potato slices over the softened onions, slightly overlapping them like shingles. Sprinkle with salt and black pepper evenly over the potatoes.

Step 6

Pour the chicken or vegetable stock into the pan, making sure the liquid just reaches the top layer of potatoes. If necessary, add a little more stock or water.

Step 7

Reduce the heat to low, cover the pan with a lid, and let the potatoes simmer gently for 30-35 minutes until they are tender and most of the liquid has been absorbed. Occasionally check to ensure the liquid hasn’t evaporated completely—add a splash of water if needed.

Step 8

Once the potatoes are tender and have absorbed the flavors of the broth, taste and adjust for seasoning if necessary.

Step 9

Optional: Sprinkle with freshly chopped parsley before serving for a touch of brightness and color.

Step 10

Serve hot as a side dish or enjoy it on its own.
