Ingredients

  • 1 pound ground beef
  • 2 medium zucchini
  • 1 tablespoon olive oil
  • 1 medium yellow onion
  • 2 garlic cloves
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions

Step 1

Wash the zucchini and slice them into thin half-moons. Dice the onion and mince the garlic cloves.

Step 2

Heat the olive oil in a large skillet over medium-high heat.

Step 3

Add the ground beef to the skillet. Cook for 5-7 minutes, breaking it up with a spoon, until it is browned and cooked through. Drain any excess fat if necessary.

Step 4

Push the ground beef to one side of the skillet, and add the diced onion and minced garlic to the empty side. Sauté for 2-3 minutes until softened and fragrant.

Step 5

Stir everything together, then add the tomato paste, dried oregano, smoked paprika, salt, black pepper, and red pepper flakes (if using). Cook for 1-2 minutes, allowing the spices to bloom.

Step 6

Mix in the sliced zucchini. Cook for 5-7 minutes, stirring occasionally, until the zucchini is tender but still slightly crisp.

Step 7

Taste and adjust seasoning if needed. Remove from heat.

Step 8

Garnish with chopped fresh parsley if desired. Serve hot, and enjoy!
