Ingredients

  • 1 cup Stone-ground grits
  • 4 cups Water
  • 1 teaspoon Salt
  • 3 tablespoons Butter
  • 1 cup Heavy cream
  • 1.5 cups Shredded sharp cheddar cheese
  • 1 cup Cooked bacon, crumbled
  • 2 tablespoons Green onions, finely chopped
  • 2 Eggs, lightly beaten
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Smoked paprika (optional, for garnish)

Directions

Step 1

In a large pot, bring the 4 cups of water and 1 teaspoon of salt to a rolling boil over medium-high heat.

Step 2

Slowly whisk in the stone-ground grits, reducing the heat to low to prevent clumping. Cook the grits for 15-18 minutes, stirring occasionally, until thick and creamy.

Step 3

Stir in the butter and heavy cream, continuing to cook for another 2-3 minutes. Remove the pot from the heat.

Step 4

Gradually mix in 1 cup of shredded sharp cheddar cheese, stirring until fully melted and incorporated.

Step 5

Add the crumbled cooked bacon, green onions, black pepper, and lightly beaten eggs to the pot. Stir quickly to combine so the eggs don't scramble.

Step 6

Sprinkle the remaining 0.5 cup of shredded cheddar cheese evenly over the top of the grits mixture.

Step 7

Cover the pot with a tight-fitting lid and cook over very low heat for an additional 5 minutes, allowing the cheese to melt and the flavors to combine.

Step 8

Serve the casserole directly from the stovetop, garnished with a sprinkle of smoked paprika if desired. Enjoy!
