  • 1 teaspoon dried thyme
  • 1 pound baby potatoes
  • 1 cup frozen peas
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Cut the beef chuck into 1.5-inch cubes and season with salt and pepper.

Step 2

Heat the olive oil in a large Dutch oven or heavy pot over medium-high heat.

Sear the beef in batches, browning on all sides, then transfer to a plate.
