Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1.5 teaspoons Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter, softened
  • 1 cup Granulated sugar
  • 0.5 cup Brown sugar, packed
  • 2 pieces Large eggs
  • 1 cup Unsweetened applesauce
  • 0.25 cup Apple cider
  • 2 tablespoons Dark rum
  • 1 teaspoon Vanilla extract
  • 0.5 cup Walnuts, chopped (optional)
  • 0.5 cup Raisins (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9-inch square or round cake pan and line the bottom with parchment paper for easy removal.

Step 2

In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Set aside.

Step 3

In a large bowl, use an electric mixer to cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs one at a time to the butter mixture, beating well after each addition.

Step 5

Mix in the applesauce, apple cider, dark rum, and vanilla extract until fully incorporated.

Step 6

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

Step 7

If using, fold in the chopped walnuts and raisins at this stage.

Step 8

Pour the batter into the prepared cake pan and spread it evenly.

Step 9

Bake for 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 10

Remove the cake from the oven and allow it to cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.

Step 11

Optional: Dust the top with powdered sugar or serve with a dollop of whipped cream for added sweetness.
