Ingredients

  • 300 g All-purpose flour
  • 50 g Granulated sugar
  • 7 g Instant dry yeast
  • 120 ml Milk, warm
  • 100 g Unsalted butter, softened
  • 1 tsp Salt
  • 1 tsp Ground cinnamon
  • 0.5 tsp Ground cardamom
  • 1 unit Zest of 1 lemon
  • 3 tbsp Dark rum or orange juice
  • 75 g Raisins
  • 50 g Dried cranberries
  • 50 g Chopped candied citrus peel
  • 50 g Chopped almonds
  • 50 g Marzipan, chopped into small cubes
  • 100 g Powdered sugar, for coating
  • 50 g Melted butter, for brushing

Directions

Step 1

In a small bowl, soak the raisins, dried cranberries, and candied citrus peel in rum or orange juice for at least 30 minutes. Set aside.

Step 2

In a large mixing bowl, combine the flour, sugar, yeast, salt, cinnamon, and cardamom. Stir well to evenly distribute the dry ingredients.

Step 3

Add the warm milk, softened butter, and lemon zest to the dry ingredients. Mix until the dough starts to come together.

Step 4

Knead for about 8-10 minutes, either by hand or with a stand mixer fitted with the dough hook, until you have a soft and elastic dough.

Step 5

Drain the soaked fruits and add them to the dough along with the chopped almonds and marzipan cubes. Knead gently to evenly incorporate the mix-ins.

Step 6

Cover the dough with a clean towel and let it rise in a warm spot for 1.5 to 2 hours, or until doubled in size.

Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

Punch down the dough and divide it into 24 small pieces, roughly the size of a walnut. Roll each piece into a ball and place them evenly spaced on the prepared baking sheet.

Bake in the preheated oven for 12-15 minutes, or until the stollen bites are golden brown and cooked through.

While the bites are still warm, brush each one generously with melted butter. Roll them in powdered sugar to fully coat. Repeat the powdered sugar coating once more after they have cooled completely.

Serve the stollen bites immediately, or store in an airtight container for up to 1 week. They also freeze well for longer storage.
