Trim any excess fat from the lamb shoulder and cut it into roughly 5 cm (2-inch) pieces. Pat dry with a paper towel and season with salt and black pepper.
Heat the olive oil in a large heavy-based pot or Dutch oven over medium-high heat. Sear the lamb pieces in batches until browned on all sides. Remove and set aside.
Reduce the heat to medium and add the finely chopped onion to the pot. Sauté until softened, about 5 minutes.

Remove the bay leaves and adjust the seasoning with additional salt and black pepper, if needed.
