Ingredients

  • 500 grams Boneless chicken breast (or tofu for a vegetarian option)
  • 4 tablespoons Soy sauce
  • 2 tablespoons Sesame oil
  • 3 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 200 grams Broccoli florets
  • 1 medium Carrot, thinly sliced
  • 1 medium Bell pepper, thinly sliced
  • 2 stalks Green onions, chopped
  • 2 tablespoons Vegetable oil
  • 2 teaspoons Cornstarch
  • 4 tablespoons Water
  • 4 cups Cooked rice or noodles

Directions

Step 1

Cut the chicken breast (or tofu) into bite-sized pieces and set aside.

Step 2

In a small bowl, mix the soy sauce, sesame oil, cornstarch, and water to create a stir-fry sauce. Set this aside.

Step 3

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Step 4

Add the chicken (or tofu) to the skillet, cooking for 5-7 minutes until the pieces are fully cooked and lightly browned. Remove from the skillet and set aside.

Step 5

In the same skillet, heat the remaining 1 tablespoon of vegetable oil and add the minced garlic and ginger. Stir-fry for 30 seconds until fragrant.

Step 6

Add the broccoli, carrots, and bell pepper to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

Step 7

Return the cooked chicken (or tofu) to the skillet and mix well with the vegetables.

Step 8

Pour the prepared stir-fry sauce into the skillet and toss everything together. Allow to cook for 2-3 minutes, or until the sauce has thickened slightly.

Step 9

Garnish with chopped green onions and serve immediately over cooked rice or noodles.
