Ingredients

  • 3 medium-sized zucchini
  • 3 large garlic cloves
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon olive oil
  • 0.5 teaspoons red chili flakes
  • 1 tablespoon toasted sesame seeds
  • 2 stalks green onions
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Wash and dry the zucchini. Slice them into thin discs or half-moons, about 1/4 inch thick.

Step 2

Peel and finely mince the garlic cloves.

Step 3

Slice the green onions thinly, separating the white and light green parts from the dark green tops.

Step 4

Heat the olive oil in a large skillet or wok over medium-high heat.

Step 5

Add the minced garlic and the white and light green parts of the green onions to the skillet. Stir fry for about 30 seconds, or until fragrant.

Step 6

Add the zucchini slices to the skillet. Stir and toss to coat them evenly with oil and aromatics.

Step 7

Drizzle the soy sauce and sesame oil over the zucchini. Sprinkle with red chili flakes, salt, and black pepper. Continue to stir fry for 5–6 minutes, or until the zucchini is tender but still slightly crisp.

Step 8

Transfer the cooked zucchini to a serving dish. Garnish with the dark green onion tops and toasted sesame seeds.

Step 9

Serve immediately as a side dish or over steamed rice for a light meal.
