Ingredients

  • 450 grams Sea scallops
  • 250 grams Jumbo asparagus
  • 3 pieces Garlic cloves
  • 1 tablespoon Fresh ginger
  • 3 tablespoons Soy sauce
  • 2 tablespoons Oyster sauce
  • 1 teaspoon Sesame oil
  • 1 teaspoon Cornstarch
  • 2 tablespoons Water
  • 2 tablespoons Vegetable oil
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Ground black pepper
  • 2 stalks Green onions

Directions

Step 1

Pat the sea scallops dry with paper towels and season lightly with salt and ground black pepper. Set aside.

Step 2

Wash and trim the jumbo asparagus by snapping off the woody ends. Slice the asparagus into 2-inch pieces.

Step 3

Peel and finely mince the garlic cloves. Peel and grate the fresh ginger. Slice the green onions into thin rounds for garnish.

Step 4

In a small bowl, prepare the stir fry sauce by mixing soy sauce, oyster sauce, sesame oil, cornstarch, and water. Stir until the cornstarch dissolves and set aside.

Step 5

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the scallops and sear for 2 minutes on each side until golden and opaque. Remove the scallops from the skillet and set aside.

Step 6

Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the garlic and ginger, stirring constantly for 30 seconds to release their aroma.

Add the sliced asparagus and stir fry for 3-4 minutes until tender-crisp. Adjust cooking time based on the thickness of the asparagus.

Step 8

Return the scallops to the skillet and pour in the prepared stir fry sauce. Stir gently to coat the scallops and asparagus evenly. Cook for another 1-2 minutes, allowing the sauce to thicken slightly.

Step 9

Remove the skillet from heat and garnish the stir fry with sliced green onions.

Step 10

Serve immediately with steamed rice or noodles for a complete meal.
