Ingredients

  • 1 medium opo squash (bottle gourd)
  • 0.5 pound ground pork
  • 3 large garlic cloves
  • 1 small onion
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 0.25 cup water
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 2 stalks green onions (optional, for garnish)

Directions

Step 1

Peel the opo squash and cut it in half lengthwise. Scoop out any seeds with a spoon, then chop the squash into bite-sized cubes.

Step 2

Mince the garlic and finely chop the onion. Slice the green onions (if using) for garnish and set aside.

Step 3

Heat the vegetable oil in a large skillet or wok over medium-high heat.

Step 4

Add the minced garlic and chopped onion to the pan. Sauté for 1-2 minutes, until fragrant and the onion becomes translucent.

Step 5

Add the ground pork to the pan. Cook for 5-6 minutes, breaking it into small pieces with a spatula or spoon, until fully cooked and no longer pink.

Step 6

Stir in the soy sauce and oyster sauce, mixing well to coat the pork evenly.

Step 7

Add the chopped opo squash to the pan, followed by the water. Stir everything together, then cover the pan with a lid. Reduce the heat to medium and cook for 5-7 minutes, stirring occasionally, until the squash is tender but not mushy.

Step 8

Season with salt and ground black pepper to taste. Adjust the seasoning as needed.

Step 9

Remove the skillet from the heat. Transfer the stir-fry to a serving plate and garnish with sliced green onions, if desired.

Step 10

Serve hot with steamed rice and enjoy your flavorful Stir Fry Opo with Ground Pork!
