Ingredients

  • 300 grams boneless, skinless chicken breasts
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon dark soy sauce
  • 3 pieces garlic cloves
  • 1 inch ginger
  • 1 medium carrot
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 2 stalks spring onions
  • 250 grams cooked chow mein noodles
  • 1 tablespoon sesame oil
  • 2 tablespoons cooking oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Slice the chicken breasts into thin strips. Mince the garlic and grate the ginger. Cut the carrot, red bell pepper, and green bell pepper into thin strips. Chop the spring onions into 1-inch pieces.

Step 2

In a medium bowl, combine the chicken strips with 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce, and 1 tablespoon of dark soy sauce. Mix well and let it marinate for at least 10 minutes.

Step 3

Heat a wok or large frying pan over high heat. Add the cooking oil, and once it's hot, add the marinated chicken strips. Stir-fry for 3–4 minutes until the chicken is cooked through and slightly golden.

Step 4

Remove the chicken from the pan and set it aside. In the same pan, add the garlic and ginger. Stir-fry for about 30 seconds until fragrant.

Step 5

Add the carrot, red bell pepper, and green bell pepper to the pan. Stir-fry for 2–3 minutes until they are slightly tender but still crisp.

Return the chicken to the pan, and add the cooked chow mein noodles. Pour in the remaining soy sauce and the oyster sauce. Add salt and black pepper. Toss everything together to ensure the noodles are well coated in the sauces.

Step 7

Add the spring onions and give the stir-fry a final toss. Drizzle the sesame oil over the top before serving.

Serve the stir fry chicken noodles hot, garnished with additional spring onions or sesame seeds if desired.
