Ingredients

  • 4 slices bread (preferably day-old)
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 medium carrot, thinly sliced
  • 2 cups broccoli florets
  • 1 large red bell pepper, thinly sliced
  • 1 medium zucchini, halved and sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, minced
  • 2 cloves garlic, minced
  • 1 teaspoon sesame seeds (optional)

Directions

Step 1

Preheat oven to 375°F (190°C).

Step 2

Cut the bread slices into small cubes to form croutons.

Step 3

In a mixing bowl, combine the bread cubes with 2 tablespoons of olive oil, garlic powder, dried oregano, salt, and black pepper. Toss well to coat the bread cubes evenly.

Step 4

Spread the seasoned bread cubes in a single layer on a baking sheet and bake for 10-12 minutes, or until golden brown and crisp. Stir halfway through cooking to ensure even browning. Set aside to cool.

Step 5

Heat the remaining 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.

Step 6

Add the minced garlic and ginger to the skillet and sauté for 30 seconds until fragrant.

Step 7

Add the sliced carrots, broccoli florets, red bell pepper, and zucchini to the skillet. Stir-fry for 5-7 minutes, or until the vegetables are tender-crisp.

Step 8

Drizzle the soy sauce and sesame oil over the vegetables and toss to coat evenly. Cook for another 1-2 minutes.

Step 9

Remove the skillet from heat and sprinkle sesame seeds over the stir-fried vegetables, if using.

Step 10

To serve, divide the stir-fried vegetables among plates and top each serving with a generous amount of seasoned croutons. Serve immediately for the best texture and flavor.
