Ingredients

  • 2 cups Broccoli
  • 1 large Carrot
  • 1 medium Bell pepper (any color)
  • 1 medium Zucchini
  • 1 small Red onion
  • 2 cloves Garlic cloves
  • 2 tablespoons Olive oil
  • 1.5 tablespoons Soy sauce
  • 1 teaspoon Sesame oil
  • 1 tablespoon Lemon juice
  • 1 teaspoon Sesame seeds
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 cups Baby spinach

Directions

Step 1

Wash and prepare all vegetables. Cut the broccoli into bite-sized florets, peel and slice the carrot into thin strips (julienne style), core and slice the bell pepper, cut the zucchini into half-moons, and slice the red onion thinly.

Mince the garlic cloves finely.

Step 3

Heat 2 tablespoons of olive oil in a large skillet or wok over medium-high heat.

Add the minced garlic and sauté for 1 minute until fragrant.
