Ingredients

  • 8 ounces Lo mein noodles
  • 12 pieces Large shrimp (peeled, deveined)
  • 3 tablespoons Soy sauce (low-sodium preferred)
  • 2 tablespoons Oyster sauce
  • 1 tablespoon Sesame oil
  • 2 tablespoons Vegetable oil (or canola oil)
  • 2 cloves Garlic (finely minced)
  • 1 teaspoon Ginger (grated)
  • 1 cup Carrots (julienned or thinly sliced)
  • 1 medium Bell pepper (sliced into thin strips, any color)
  • 1 cup Snap peas (trimmed)
  • 3 stalks Green onions (sliced into 2-inch pieces)
  • 1 teaspoon Cornstarch
  • 2 tablespoons Water
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Cook the lo mein noodles according to the package instructions. Drain and set aside.

Step 2

In a small bowl, combine soy sauce, oyster sauce, sesame oil, cornstarch, and water. Mix well and set the sauce aside.

Step 3

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Step 4

Add the shrimp to the skillet and season with a pinch of salt and black pepper. Stir-fry for 2-3 minutes until the shrimp turn pink and opaque. Remove the shrimp from the pan and set aside.

Step 5

Add the remaining 1 tablespoon of vegetable oil to the skillet. Toss in the minced garlic and grated ginger, stirring quickly for about 30 seconds until fragrant.

Step 6

Add the carrots, bell pepper, and snap peas to the skillet. Stir-fry the vegetables for 3-4 minutes, or until they are tender but still crisp.

Step 7

Return the cooked shrimp to the skillet along with the green onions. Toss to combine.

Step 8

Add the cooked noodles to the skillet and pour the prepared sauce over the top. Use tongs or a spatula to toss everything together, ensuring the sauce evenly coats the noodles, shrimp, and vegetables.

Step 9

Continue to stir-fry for another 2-3 minutes until everything is heated through. Taste and adjust seasoning if needed.

Step 10

Serve hot and enjoy your homemade Stir Fried Shrimp Lo Mein!
