Ingredients

  • 1 head Savoy cabbage
  • 2 tablespoons Olive oil
  • 2 cloves Garlic cloves, minced
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 3 medium Red onion
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Sugar
  • 2 tablespoons Balsamic vinegar
  • 3 tablespoons Water

Directions

Step 1

Prepare the Savoy cabbage by removing any tough outer leaves, cutting it in half, and slicing it into thin strips.

Step 2

Peel and slice the red onions thinly for the onion marmalade.

Step 3

In a wide sauté pan, melt the butter over medium heat. Add the sliced red onions and cook gently, stirring occasionally, for about 10 minutes until softened and beginning to caramelize.

Step 4

Sprinkle the sugar over the onions and stir to combine. Cook for another 3-4 minutes to enhance their sweetness and deepen their color.

Step 5

Add the balsamic vinegar and water to the onions, stirring well. Reduce the heat to low and let the mixture simmer gently for about 10 minutes until it thickens into a marmalade-like consistency. Set the onion marmalade aside and keep warm.

Step 6

In another large skillet or wok, heat the olive oil over medium-high heat. Add the minced garlic and sauté for 30 seconds until fragrant.

Step 7

Increase the heat to high and add the sliced Savoy cabbage to the skillet. Stir-fry for 4-5 minutes, tossing continuously, until the cabbage is tender-crisp and slightly charred on the edges.

Step 8

Season the cabbage with salt and black pepper, adjusting to taste.

Step 9

Transfer the stir-fried cabbage to a serving platter and top it generously with the warm onion marmalade.

Step 10

Serve the dish immediately as a side or with crusty bread for a complete meal.
