Ingredients

  • 8 ounces Rice noodles
  • 12 ounces Large shrimp (peeled and deveined)
  • 1.5 tablespoons Curry powder
  • 3 tablespoons Soy sauce
  • 2 teaspoons Fish sauce
  • 1 tablespoon Lime juice
  • 1 teaspoon Sugar
  • 2 tablespoons Vegetable oil
  • 3 cloves Garlic (minced)
  • 2 large Eggs
  • 4 stalks Green onions (sliced)
  • 1 cup Bean sprouts
  • 0.25 cup Cilantro (chopped)
  • 0.25 cup Crushed peanuts
  • 0.5 teaspoons Red pepper flakes (optional)

Directions

Step 1

Prepare the rice noodles according to the package instructions. Drain and set aside.

Step 2

In a bowl, combine curry powder, soy sauce, fish sauce, lime juice, and sugar. Stir until the sugar is dissolved. Set aside.

Step 3

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Step 4

Add the shrimp to the skillet and cook for 2–3 minutes, or until they just turn pink and are cooked through. Remove from the skillet and set aside.

Step 5

Add the remaining tablespoon of vegetable oil to the skillet. Stir in the minced garlic and cook for 30 seconds until fragrant.

Step 6

Push the garlic to the side of the skillet and add the eggs. Scramble the eggs lightly and cook until just set, then mix them with the garlic.

Step 7

Add the cooked rice noodles to the skillet and pour the prepared curry sauce over them. Toss to coat evenly.

Step 8

Return the cooked shrimp to the skillet and add the green onions and bean sprouts. Toss everything together and heat through for 2–3 minutes.

Step 9

Remove from heat and garnish with chopped cilantro, crushed peanuts, and red pepper flakes, if desired.
