Ingredients

  • 500 grams pork tenderloin
  • 2 tablespoons cornstarch
  • 1 tablespoon soy sauce
  • 2 tablespoons vegetable oil
  • 4 units garlic cloves
  • 1 tablespoon ginger
  • 3 tablespoons black bean sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon dark soy sauce
  • 1 teaspoon sugar
  • 1 unit red bell pepper
  • 1 unit green bell pepper
  • 1 unit onion
  • 2 stalks scallions
  • 100 milliliters water

Directions

Step 1

Thinly slice the pork tenderloin into strips and place in a bowl. Add 1 tablespoon of soy sauce and 1 tablespoon of cornstarch. Mix well to coat and let it marinate for 15 minutes.

Step 2

While the pork is marinating, chop the red and green bell peppers into bite-sized pieces, slice the onion into wedges, mince the garlic, and finely grate the ginger.

Step 3

Heat a wok or large skillet over high heat. Add 1 tablespoon of vegetable oil and swirl to coat.

Step 4

Stir-fry the marinated pork in batches to avoid overcrowding the pan. Cook until the pork is browned and just cooked through, about 2-3 minutes per batch. Remove the pork from the wok and set aside.

Step 5

Add the remaining 1 tablespoon of vegetable oil to the wok. Stir-fry the garlic and ginger until fragrant, about 30 seconds.

Step 6

Add the onion, red bell pepper, and green bell pepper to the wok. Stir-fry for 2-3 minutes until the vegetables are slightly tender but still crisp.

Step 7

Return the pork to the wok and toss to combine with the vegetables.

Step 8

In a small bowl, mix 3 tablespoons of black bean sauce, 1 tablespoon of oyster sauce, 1 teaspoon of dark soy sauce, 1 teaspoon of sugar, and 100 milliliters of water. Stir until the sugar dissolves.

Step 9

Pour the sauce mixture over the pork and vegetables. Toss everything together to coat uniformly.

Step 10

Let the mixture simmer for 2-3 minutes, allowing the flavors to meld and the sauce to thicken slightly.

Step 11

Add the sliced scallions and give the dish a final toss before removing from the heat.

Step 12

Serve the stir fried pork in black bean sauce hot over steamed rice or noodles.
