Ingredients

  • 6 heads baby bok choy
  • 3 cloves garlic
  • 1 inch ginger
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil
  • 1 cup water or vegetable broth
  • 1 teaspoon cornstarch
  • 1 teaspoon sugar
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Thoroughly rinse the baby bok choy under running water to remove any dirt. Cut each head in half lengthwise.

Step 2

Peel and finely mince the garlic. Peel and finely julienne the ginger.

Step 3

In a small bowl, whisk together the soy sauce, oyster sauce, sesame oil, cornstarch, sugar, and 1 cup of water or vegetable broth. Set aside.

Heat the vegetable oil in a large skillet or wok over medium-high heat until shimmering.

Add the minced garlic and julienned ginger to the hot oil. Stir-fry for 30 seconds, or until fragrant.

Add the bok choy halves to the skillet, cut side down. Stir-fry for 2-3 minutes, turning occasionally, until the leaves are wilted and the stalks begin to soften.
