Ingredients

  • 1.5 cups Broccoli florets
  • 1 Carrot, sliced into thin rounds
  • 1 Red bell pepper, sliced
  • 1 cup Snow peas
  • 1 cup Baby corn
  • 1 cup Button mushrooms, sliced
  • 3 Garlic cloves, minced
  • 1 tablespoon Fresh ginger, grated
  • 3 tablespoons Soy sauce
  • 1 tablespoon Sesame oil
  • 2 tablespoons Olive oil
  • 1 tablespoon Cornstarch
  • 3 tablespoons Water
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 Green onions, chopped

Directions

Step 1

Prepare all the vegetables by washing and chopping them as required.

Step 2

In a small bowl, mix the soy sauce, sesame oil, cornstarch, and water. Stir well to combine and set aside.

Step 3

Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.

Step 4

Add the minced garlic and grated ginger to the pan and sauté for about 30 seconds until fragrant.

Step 5

Add the broccoli, carrots, red bell pepper, snow peas, baby corn, and mushrooms to the pan.

Step 6

Stir-fry the vegetables for about 5-6 minutes, tossing frequently, until they are crisp-tender.
