Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 0.25 cup soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 red bell pepper
  • 1 cup broccoli florets
  • 1 carrot
  • 1 cup sugar snap peas
  • 3 garlic cloves
  • 1 inch piece fresh ginger
  • 2 tablespoons hoisin sauce
  • 1 teaspoon sesame oil
  • 3 green onions
  • 1 tablespoon sesame seeds

Directions

Step 1

Slice the chicken breasts into thin strips. In a medium bowl, mix the chicken with the soy sauce and cornstarch. Let it marinate while you prepare other ingredients.

Step 2

Slice the red bell pepper into thin strips. Cut the carrot into thin matchsticks. Mince the garlic and grate the ginger.

Step 3

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken strips and stir-fry until they are browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the garlic and ginger and stir-fry for about 30 seconds until fragrant.
