Ingredients

  • 4 large eggs
  • 1 tablespoon soy sauce
  • 2 stalks green onions
  • 1 teaspoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 pinch salt
  • 1 pinch ground black pepper

Directions

Step 1

Crack the eggs into a medium-sized bowl. Add the soy sauce, a pinch of salt, and a pinch of ground black pepper. Beat the eggs with a fork or a whisk until the yolks and whites are well combined.

Step 2

Wash and finely chop the green onions, separating the white parts from the green parts.

Step 3

Heat the vegetable oil in a non-stick skillet over medium-high heat. Once the oil is hot but not smoking, add the white parts of the green onions and sauté for about 30 seconds until fragrant.

Step 4

Pour the beaten eggs into the skillet. Let them cook for a few seconds without stirring, allowing the bottom to set slightly.

Step 5

As the eggs begin to set around the edges, use a spatula to gently stir and fold the eggs. Continue gently stirring occasionally, allowing larger folds to form.

Step 6

When the eggs are about three-quarters cooked, add the sesame oil and most of the green parts of the green onions (reserving a few for garnish) and continue to cook until the eggs are cooked through and fluffy, about 1 to 2 minutes.

Step 7

Remove the skillet from heat and transfer the stir-fried eggs to a serving plate. Garnish with the remaining green onion greens.
