Ingredients

  • 200 g rice vermicelli (bihun)
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 200 g chicken breast, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 carrot, julienned
  • 100 g bean sprouts
  • 2 spring onions, chopped
  • 1 egg
  • 100 ml water
  • 0.5 teaspoon salt
  • 0.25 teaspoon white pepper

Directions

Step 1

Soak the rice vermicelli in room temperature water for about 10 minutes until they begin to soften. Drain and set aside.

Step 2

Heat 1 tablespoon of vegetable oil in a large pan or wok over medium heat.

Add the minced garlic and sauté for 30 seconds until fragrant.

Add the sliced chicken breast to the pan and stir-fry until it is almost cooked through, about 3-4 minutes.

Push the chicken to one side of the pan and add the remaining vegetable oil. Crack the egg into the pan and scramble it quickly.
