Ingredients

  • 12 pieces Lasagna noodles
  • 2 cups Ricotta cheese
  • 2 cups Shredded mozzarella cheese
  • 0.5 cups Grated Parmesan cheese
  • 10 ounces Frozen spinach (thawed and drained)
  • 1 large Egg
  • 2 teaspoons Minced garlic
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 3 cups Marinara sauce
  • 1 tablespoon Olive oil
  • 2 tablespoons Chopped fresh basil (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and prepare a 9x13-inch baking dish by spreading 1 cup of marinara sauce evenly on the bottom.

Step 2

Cook the lasagna noodles in a large pot of salted boiling water according to package instructions, until they are al dente. Drain and lay them flat on a clean surface or parchment paper to cool slightly.

Step 3

In a large mixing bowl, combine ricotta cheese, 1 cup of shredded mozzarella, grated Parmesan, thawed and drained spinach, egg, minced garlic, salt, and black pepper. Mix until well combined.

Step 4

Take one cooked lasagna noodle and spread about 2-3 tablespoons of the ricotta-spinach mixture evenly over its surface. Carefully roll the noodle up from one end to the other, forming a compact roll.

Step 5

Place the lasagna roll seam-side down in the prepared baking dish. Repeat with the remaining noodles and filling.

Step 6

Pour the remaining marinara sauce evenly over the tops of the lasagna rolls, ensuring all rolls are fully covered in sauce to prevent them from drying out.

Step 7

Sprinkle the remaining 1 cup of shredded mozzarella cheese over the top of the rolls.

Step 8

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and lightly golden on top.

Step 9

Remove the dish from the oven and let the lasagna rolls rest for 5 minutes. Garnish with fresh basil if desired before serving.
