Ingredients

  • 2 pieces (6-8 oz each) beef fillets
  • 1 teaspoon (or to taste) salt

  • 3 tablespoons (divided) butter
  • 2 ounces (crumbled) Stilton cheese
  • 8 ounces (sliced) white mushrooms
  • 2 cloves (minced) garlic cloves
  • 1 tablespoon (chopped) fresh parsley
  • 2 tablespoons heavy cream

Directions

Step 1

Take the beef fillets out of the fridge 30 minutes before cooking to bring them to room temperature.

Season the fillets generously with salt and black pepper on both sides.

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Once hot, carefully sear the fillets for 2-3 minutes on each side for medium-rare (or adjust according to your desired doneness). Remove the fillets from the pan and set aside, loosely covering them with foil to rest.
