Ingredients

  • 4 pieces filet mignon steaks
  • 120 grams Stilton cheese
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 garlic cloves, minced
  • 1 teaspoon fresh thyme leaves

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Using a sharp knife, cut a small pocket into the center of each filet mignon steak, being careful not to cut all the way through.

Step 3

Stuff approximately 30 grams of Stilton cheese into each pocket, pressing it in gently to fill the cavity.
