Preheat your oven to 180°C (350°F).
Wipe the mushrooms clean with a damp cloth and remove the stems. Set the caps aside and finely chop the stems.
Peel and mince the garlic. Finely chop the parsley.
In a frying pan, melt the butter over medium heat. Add the chopped mushroom stems and minced garlic, cooking for 2-3 minutes until softened.
Reduce the heat to low and stir in the heavy cream and Stilton cheese. Mix until the cheese has melted and the filling is creamy. Remove from heat and stir in the parsley. Season with salt and pepper.
Place the mushroom caps on a lightly oiled baking tray, gill side up. Spoon the Stilton mixture evenly into each cap.
