  • 2 cups Maize meal (fine or medium grind)
  • 4 cups Water
  • 0.5 teaspoons Salt

Step 1

In a medium-sized pot, bring 3 cups of water to a boil over medium heat. Add the salt to the boiling water.

In a small bowl, mix 1 cup of maize meal and the remaining 1 cup of water to form a smooth slurry free of lumps.

Gradually pour the maize meal slurry into the boiling water, stirring constantly with a wooden spoon to prevent clumping.

Reduce the heat to low and continue stirring for 5 to 7 minutes until the mixture thickens and starts forming a porridge-like consistency.

Sprinkle the remaining 1 cup of maize meal into the pot a little at a time while continuously stirring. This will help make the oshifima stiffer.
