Ingredients

  • 1.75 cups All-purpose flour
  • 0.75 cups Granulated sugar
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 0.5 cups Unsalted butter, melted
  • 0.75 cups Whole milk
  • 1 teaspoons Vanilla extract
  • 2 large Eggs
  • 1.5 cups Fresh rhubarb, diced
  • 0.5 cups Brown sugar
  • 2 tablespoons Honey
  • 3 tablespoons Unsalted butter

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a standard 12-cup muffin tin with paper liners or grease the cups lightly.

Step 2

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt until well combined.

Step 3

In a separate medium bowl, whisk together the melted butter, milk, vanilla extract, and eggs until the mixture is smooth.

Step 4

Gradually pour the wet ingredients into the dry ingredients, stirring gently with a wooden spoon or silicone spatula until just combined. Do not overmix; the batter will be slightly lumpy.

Step 5

Gently fold in the diced rhubarb, ensuring the pieces are distributed evenly throughout the batter.

Step 6

Spoon the batter evenly into the prepared muffin tin, filling each cup about two-thirds full.

Step 7

In a small saucepan over low heat, combine the brown sugar, honey, and 3 tablespoons of butter. Stir occasionally until the mixture is melted and smooth, about 2-3 minutes. Remove from heat.

Step 8

Drizzle about a teaspoon of the sticky glaze over the top of each muffin before baking.

Step 9

Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 10

Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

Step 11

Optional: For extra stickiness, drizzle additional glaze over the muffins once they are slightly cooled.
