Ingredients

  • 200 grams Butter
  • 200 grams Dark chocolate
  • 150 grams Caster sugar
  • 150 grams Light brown sugar
  • 4 large Eggs
  • 2 teaspoons Vanilla extract
  • 100 grams Self-raising flour
  • 30 grams Cocoa powder
  • 100 milliliters Milk
  • 200 milliliters Heavy cream
  • 150 grams Dark chocolate (for ganache)

Directions

Step 1

Preheat the oven to 180°C (350°F) and grease and line a 9-inch round cake pan with parchment paper.

Step 2

Melt the butter and dark chocolate (200 grams) together in a heatproof bowl set over a pot of simmering water, stirring occasionally. Once melted and smooth, remove from the heat and allow to cool slightly.

Step 3

In a large mixing bowl, whisk together the caster sugar, light brown sugar, eggs, and vanilla extract until pale and creamy.

Step 4

Slowly mix the melted chocolate and butter mixture into the egg and sugar mixture, whisking continuously until fully combined.

Sift the self-raising flour and cocoa powder into the wet mixture, folding gently until no streaks remain.
