Ingredients

  • 4 large sweet potatoes
  • 6 slices bacon
  • 2 tablespoons brown sugar
  • 2 tablespoons butter
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 stalks green onions
  • 4 tablespoons sour cream (optional for serving)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash and scrub the sweet potatoes thoroughly. Pat them dry with a paper towel.

Step 3

Pierce each sweet potato several times with a fork, then place them directly on the oven rack or on a baking sheet.

Step 4

Bake the sweet potatoes for 50-60 minutes, or until they are tender and can be easily pierced with a knife.

Step 5

While the sweet potatoes bake, prepare the sticky bacon filling. Chop the bacon slices into small pieces.

Step 6

Heat a large skillet over medium heat. Add the chopped bacon and cook until it starts to crisp, about 5-7 minutes. Remove excess grease from the skillet, leaving about 1 tablespoon behind.

Step 7

Sprinkle the brown sugar over the bacon in the skillet and stir continuously until the sugar melts and coats the bacon, about 2-3 minutes. Remove the skillet from heat and set aside.

Step 8

Once the sweet potatoes are done baking, carefully remove them from the oven and let them cool slightly for about 5 minutes.

Step 9

Slice each sweet potato lengthwise down the middle, being careful not to cut all the way through. Gently push the sides of the potato to create a pocket for the filling.

Step 10

Fluff the sweet potato flesh inside with a fork and mix in a small pat of butter (about 1/2 tablespoon per potato). Season the inside with salt, pepper, and smoked paprika.

Step 11

Divide the sticky bacon mixture evenly into the sweet potato pockets. Sprinkle chopped green onions over the top of each potato.

Step 12

Serve immediately. Optionally, add a dollop of sour cream to each sweet potato jacket for extra creaminess.
