  • 6 large (about 2 pounds) fresh tomatoes
  • 2 tablespoons olive oil
  • 1 medium (finely chopped) yellow onion
  • 1 stalk (finely diced) celery
  • 2 cloves (minced) garlic
  • 1 teaspoon granulated sugar
  • 1 teaspoon dried basil
  • 0.5 teaspoons dried oregano
  • 0.5 teaspoons (or to taste) salt
  • 0.25 teaspoons (or to taste) black pepper
  • 0.5 cup water (or vegetable broth)
  • 1 tablespoon butter (optional for richness)

Directions

Step 1

Begin by preparing the tomatoes. Bring a large pot of water to a boil. Using a small knife, cut a shallow 'X' in the bottom of each tomato. Place the tomatoes in the boiling water for 30–60 seconds or until the skins start to peel back. Immediately transfer the tomatoes to an ice bath to cool. Peel off the skins, core them, and roughly chop the tomatoes. Set aside.

Step 2

Heat the olive oil in a large saucepan over medium heat. Add the finely chopped onion and diced celery, and sauté for 5–7 minutes, until softened and translucent.

Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

Add the chopped tomatoes to the saucepan along with the granulated sugar, dried basil, dried oregano, salt, and black pepper. Stir well to combine.

Pour in the water (or vegetable broth) and bring the mixture to a simmer.

Reduce the heat to low and let the tomatoes stew for 20–25 minutes, stirring occasionally, until they break down and the mixture thickens slightly.

If using, stir in the butter for added richness right before serving. Adjust the seasoning with more salt and pepper, if needed.
