Ingredients

  • 2 cups chickpeas (dried, or canned and drained)
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 can (14-16 oz) crushed tomatoes
  • 3 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • 0.5 teaspoon ground turmeric
  • 0.25 teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 bay leaf
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

If using dried chickpeas, soak them overnight in water. Drain and rinse before cooking, then place in a pot, cover with water, and simmer for 1-2 hours until tender.

Step 2

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 3

Add the diced onion and sauté for 3-4 minutes until softened and translucent.

Step 4

Stir in the minced garlic, diced carrots, and diced celery. Cook for another 5-7 minutes, stirring occasionally, until the vegetables are slightly softened.
