  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 1 cup red wine
  • 2 bay leaves
  • 4 fresh thyme sprigs
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley (chopped, for garnish)

Directions

Step 1

Heat the olive oil in a large heavy-bottomed pot or Dutch oven over medium-high heat.

Season the beef cubes with salt and black pepper, then sear them in batches until browned on all sides. Remove the browned beef and set aside.
