  • 4 pieces Yellow potatoes, peeled and halved
  • 2 pieces Sweet potatoes, peeled and cut into large chunks
  • 1 large Onion, finely chopped
  • 2 medium Tomatoes, finely chopped
  • 3 pieces Garlic cloves, minced
  • 4 stalks Scallions, chopped
  • 1 cup Cilantro, chopped
  • 1 teaspoon Cumin
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Vegetable oil
  • 10 cups Water
  • 2 pieces Avocado (for serving, optional)
  • 2 cups White rice (for serving, optional)

Directions

Step 1

In a large stockpot, heat the vegetable oil over medium heat. Add the chopped onion, garlic, tomatoes, scallions, and cumin. Sauté for 5-7 minutes until fragrant and softened.

Step 2

Add the bone-in beef, pork, and chicken to the pot. Season with salt and black pepper. Sear the meats for 5-8 minutes until lightly browned.
