Ingredients

  • 4 pieces boneless chicken thighs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 cup all-purpose flour
  • 2 large, beaten eggs
  • 1 cup breadcrumbs (store-bought or homemade)
  • 1 cup vegetable oil
  • 2 cups store-bought marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 4 servings cooked spaghetti (optional)

Directions

Step 1

Season the chicken thighs with salt, black pepper, and garlic powder on both sides.

Step 2

Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs.

Step 3

Coat each chicken thigh in flour, then dip into the beaten eggs, and finally coat with breadcrumbs. Press the breadcrumbs into the chicken to ensure an even coating.

Step 4

Heat the vegetable oil in a large skillet over medium-high heat. Once the oil is hot, fry the breaded chicken thighs for 3-4 minutes per side or until golden brown and cooked through. Remove and set aside on paper towels to drain excess oil.

Step 5

Preheat your oven to 375°F (190°C).

Step 6

Spread 1 cup of marinara sauce in the bottom of a baking dish. Arrange the fried chicken thighs on top of the sauce.

Step 7

Spoon the remaining marinara sauce over each piece of chicken. Sprinkle shredded mozzarella and grated Parmesan cheese evenly over the chicken.

Step 8

Top with a sprinkle of dried oregano for added flavor.

Step 9

Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.

Step 10

Serve hot on its own or over cooked spaghetti for a complete meal. Enjoy your budget-friendly chicken parm!
