Ingredients

  • 6 pieces bone-in chicken thighs
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 4 cloves garlic cloves, minced
  • 3 medium carrots, sliced into rounds
  • 2 stalks celery stalks, chopped
  • 4 cups chicken broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 leaves bay leaves
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Season the chicken thighs with 1 teaspoon of salt, black pepper, and paprika. Set aside.

Step 2

Heat the olive oil in a large pot or Dutch oven over medium-high heat.

Step 3

Add the chicken thighs skin-side down, and sear for 3-4 minutes per side until golden brown. Remove the chicken from the pot and set aside.

Step 4

In the same pot, add the diced onion, and sauté for 3-4 minutes until softened and translucent.

Step 5

Add the minced garlic, sliced carrots, and chopped celery. Cook for an additional 2-3 minutes, stirring occasionally.

Step 6

Stir in the tomato paste, and cook for 1 minute to enhance its flavor.

Step 7

Pour in the chicken broth and stir to combine. Add the dried thyme, bay leaves, and the remaining 0.5 teaspoon of salt.

Step 8

Return the seared chicken thighs to the pot, ensuring they are submerged in the liquid.

Step 9

Bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pot with a lid and cook for 45-50 minutes, or until the chicken is tender and fully cooked through.

Step 10

Remove the bay leaves and adjust seasoning with additional salt and pepper, if needed.

Step 11

Garnish with chopped fresh parsley, if desired, and serve hot with rice, mashed potatoes, or crusty bread.
