Ingredients

  • 1000 g beef chuck (cut into large cubes)
  • 500 g pearl onions (peeled)
  • 4 tbsp olive oil
  • 250 ml red wine
  • 2 tbsp tomato paste
  • 400 g ripe tomatoes (grated or blended)
  • 500 ml beef stock
  • 2 tbsp red wine vinegar
  • 1 cinnamon stick
  • 4 cloves
  • 2 bay leaves
  • 5 allspice berries
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tsp black pepper
  • 250 ml water

Directions

Step 1

Heat 2 tablespoons of olive oil in a large pot over medium-high heat. Add the beef chunks in batches and sear them on all sides until nicely browned. Remove the browned beef and set aside.

Step 2

Add the remaining 2 tablespoons of olive oil to the pot. Lower the heat to medium and add the peeled pearl onions. Sauté until they start to caramelize slightly, about 5–7 minutes.

Step 3

Return the browned beef to the pot. Stir in the tomato paste and cook for 2 minutes to enhance its flavor.

Step 4

Deglaze the pot with the red wine. Scrape the bottom of the pot to loosen any browned bits, then let the wine simmer for 2–3 minutes to reduce slightly.
