  • 2 cups Water
  • 2.25 teaspoons Active dry yeast
  • 0.25 cups Warm water (about 110°F/45°C)
  • 3 tablespoons Honey
  • 2 tablespoons Unsalted butter, melted
  • 1.5 teaspoons Salt
  • 2.5 cups All-purpose flour
  • 1.5 cups Whole wheat flour
  • 0.25 cups Optional rolled oats (for topping)

Directions

Step 1

In a saucepan, bring 2 cups of water to a boil. Add the steel cut oats and reduce the heat to low. Simmer for about 10-15 minutes, stirring frequently, until the water is absorbed and the oats are soft. Remove from heat and let cool to room temperature.

Step 2

In a small bowl, combine the warm water (110°F/45°C) and the active dry yeast. Let it sit for 5-10 minutes until the yeast becomes frothy.

In a large mixing bowl, combine the cooked oats, honey, melted butter, and salt. Stir well to mix.

Add the frothy yeast mixture to the large mixing bowl and stir to combine.
