  • 2 tablespoons Olive oil
  • 4 pieces Garlic cloves

  • 1 cup Dry white wine
  • 1 cup Vegetable or chicken stock
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Fresh parsley, chopped
  • 2 sprigs Fresh thyme
  • 1 whole Lemon wedges
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Freshly ground black pepper

Directions

Step 1

Begin by cleaning the mussels. Rinse them under cold water and scrub the shells with a stiff brush to remove any debris. Remove the beard (the fibrous threads sticking out from the shell) by pulling it firmly toward the hinge of the mussel. Discard any mussels that remain open after tapping them lightly, as they are not safe to eat.

Finely chop the garlic and shallot. Set aside.

Heat the olive oil in a large, deep pot over medium heat. Add the garlic and shallot and sauté for 2-3 minutes until fragrant and softened, but not browned.

Add the white wine, vegetable or chicken stock, fresh thyme sprigs, salt, and black pepper to the pot. Stir to combine and bring the mixture to a simmer.
