Start by preparing the artichokes. Using a sharp knife, trim about 1 inch off the tops of the artichokes to remove the spiky tips. Use scissors to snip the sharp tips of any remaining leaves.
Peel the stem of the artichokes to remove the tough outer layer, then cut off the bottom 1/2 inch of the stem.
